An Easy GREEN SALAD
As we are finding our way of WFH I am trying to keep consistent with a routine to stay inline with the days. Amongst the chaos I’m using the situation to look inward and keeping up with wellness to the fullest. Today on the menu a new cucumber salad recipe that was too good not to share!
salad:
x 1 full thinly sliced cucumber
x thinly sliced red onion
x 1 heaping handful arugula
x 1/2 can of roasted chickpeas. Toss in olive oil and za’tar seasoning. Bake for 15 mins on 425
x top with feta
dressing:
x 1/4 c olive oil
x 1/4 c white vinegar
x 1 lemon juiced
x salt and pepper
*add a toasted piece of naan bread for extra crunch!
