Extra Healthy Egg Salad Sandwich Recipe
Or should I say Egg-stra healthy egg salad sandwich… lol I couldn’t help myself! Nothing hits like a good, crunchy, cold, egg salad sandwich with soft bread. Especially now as a mom I’m always thinking of ways to sneak in healthy options on regular recipes, so today when making lunch I found a few recipes and I can say i’ll never make a “regular” egg salad sandwich again! I haven’t used mayo in years, i switched over to avocado oil options, but lately I found this one from Primal Kitchen that has nice and clean ingredients. BUT today I didn’t use that (although you could) I replaced the mayo that egg salad typically calls for, for full fat greek yogurt. I’ve been really keeping an eye on my protein levels, and the plain greek yogurt from Trader Joes has 17 g per 170 grams. That paired with eggs makes a great high protein lunch option. And then just to be extra, I used the Dave's Killer Bread Organic Bread that has 5 grams of protein per slice. I mixed that with a few other ingredients (below) and it was a huge hit! A new favorite healthy lunch on rotation. Let me know if you try!
Ingredients:
hard boiled Eggs (I used 5 eggs and made enough for about 3-4 sandwiches, depending on what kind of bread you use - also saves great for the next day)
large dallop of plain greek yogrt
loads of dill (fresh dill is so much better)
chopped onion (very small)
chopped spinach (very small)
dash of garlic powder
1 tsp dijon mustard
large dash of
Maldon salt (once your onto this salt you’ll never go back to regular salt again, promise!)
Pepper
*I eye ball ingredients for consistency, start with mashed eggs then add in greek yogurt slowly to consistency that you like.
Directions:
1) hard boil eggs
2) let eggs sit on ice bowl of water for a few minutes to cool down
3) peel + mash eggs
4) add in greek yogurt slowly to desired consistency
5) add in rest of spices, onions and spinach
6) spread on bread, cut diagonal, and enjoy!
